I don't want the norm on this account to be about chain restaurants. I'm an advocate of locally-owned, small-business eateries.
But sometimes, the chains are hard to avoid. Whether it be about time, money, or the needed convenience, sometimes they are hard to avoid.
I had two meals at Costa Vida, since I have been back in town, and I have to say, I was impressed. They operate with the fast-fresh methodology, where the food can be customized and prepared right before you. The shredded beef burrito (pictured) was amazing, but I loved the tacos even more. The barbacoa is very, very good.
This place reminds me of one of my favorite chains in Southern California, Cafe Rio, where I loved all the meat choices.
So, if you do find it necessary to visit a chain restaurant, Costa Vida is one of the better ones.
